The people at "Flatbreads" believe that food is sacred and they work very hard so their customers can have a spiritual eating experience. They are probably one of a small number of pizza restaurants in New England that use pure spring water, organic flour, kosher salt and real cake yeast to make their own pizza dough. But it doesn’t stop there. While pizza sauce is readily available in a can, Flatbreads only uses organic tomatoes and a dozen other natural and locally-grown organic ingredients to make their own signature tomato sauce in a wood-fired cauldron right in the dining room. From free-range chicken to nitrate-free pepperoni and sausage made right on the premises, they are committed to creating flatbread pizzas with the very best ingredients possible.

It all began back in 1998 with a guy in the hills of Vermont who liked to make rustic pizza in a hand-built stone oven for his skiing friends. Eventually he set up in a small converted barn, baking all-natural, mostly-organic pizzas that he sold in supermarkets and natural food stores. On weekends, he opened up to the public so that they could enjoy the fresh flatbreads right out of the wood-fired clay oven. In 1989 he opened the first of what now totals 7 Flatbread Company restaurants. It was, and continues to be, a labor of love.

I’m a big fan of Flatbreads organic salad, made with mesclun greens and sweet leaf lettuces, tossed with organic celery and carrots, toasted sesame seeds, arame seaweed, and topped with homemade berry vinaigrette dressing. As for the pizzas, they are absolutely outstanding, and each is enough for 2 people. One of our favorites is called the ‘CoEvolution’ which has Kalamata olives, fresh rosemary, red onions, oven roasted peppers, goat cheese, mozzarella, garlic, cheese and herbs. There are many varieties to choose from, and a special that changes weekly. The large rustic, wood-fired stone oven is right in the center of the dining room, and a focal point in the simply gorgeous circular post and beam structure.

Flatbreads is a community-oriented company, where they believe in working hard, having fun and doing their part to save the planet. Every Tuesday night they give back to the community with benefit nights and sponsorships to help local organizations. On that night they donate $3.50 for every Flatbread sold. Flatbreads is located in the Eastern Slope Inn complex on main street in North Conway.
